Of course you have. We all have. Cheesecake is like balm to the weary soul. A creamy, crackery, sweet bowl of goodness that says: “Hey, you’re okay, kid.”

But, alas, traditional cheesecake is a lot of work. And sometimes, you don’t want to do MORE work when you come home from work. No, you want to put on your fat pants, sink into the couch and fill your mouth-hole with cheesecakey goodness. Well, if this sounds familiar, do we have the solution for you!

Crock-Pot cheesecake. Yes…cheesecake in the slow cooker, no baking or oven required. Minimal effort with maximum taste? Count us in!

The recipe (which can be found in full here at the Crock-Pot Ladies blog) is quite simple. The most important thing is to make sure you have a heatproof glass or ceramic bowl that can fit inside your slow cooker. You’ll assemble the cheesecake in the bowl, and then put it inside slow cooker filled with water. Now, you need to add enough water to reach to about the middle of the bowl. But, be careful—you don’t to get your cheesecake wet!

Then, as they say, set it and forget it. In two to three hours you will have delicious, creamy cheesecake awaiting you.

Best of all, this recipe is so easy to modify any way you desire! For example, let’s say you want a key lime cheesecake. Well, just add in lime zest and lime juice to your cheese mixture. Get fancy with and use coconut macroon crumbs for the crust instead of graham crackers.

Or what about something seasonal like pumpkin cheesecake? Just add pumpkin pie puree and pumpkin pie spice to your cream cheese mixture! And, again, you don’t have to stick with graham crackers. How about gingerbread snap cookies as the perfect holiday-themed crust?

Indeed, the best thing about this slow cooker cheesecake recipe is that it makes for the perfect party dessert. Since it is so simple to make and doesn’t require the oven, you can focus on the important things, like having fun and spending time with family. Oh, who are we kidding? You will have more time for eating. Lots, lots more eating.
