Ah, vegetables. Some people either love them or hate them, don’t they? Do you or your kids struggle to get enough of this essential food group? (And no, french fries don’t count.) You’ve heard it before, and we promise it’s true: Vegetables do not have to taste bland and boring.
Find the right recipes, and you won’t just end the struggle to incorporate veggies into your diet, you’ll find yourself clamoring for them.
Need some ideas? This recipe from Tasty for Garlic Parmesan Carrot Fries is likely to do the trick. Carrots by themselves are great in hummus and all, but coat these babies in some garlic, Parmesan cheese and parsley, and stick them in the oven and you’ve got a whole new flavor.
We promise you’ll forget you’re even eating a root vegetable.
Plus, you can get your fix of that french fry taste without all the extra guilt, as these carrot fries are baked, not deep fried.
To make this super simple recipe at home, all you’ll need are some fresh carrots and parsley, with some additional staple items you probably already always have at the ready: oil, Parmesan cheese, garlic powder, salt pepper and parsley.
Then it’s as easy as following just a handful of simple steps.
Instructions:
1. Slice up the carrots into fry-shaped sticks.
2. Toss them in all of the other ingredients.
3. Spread them out on a baking sheet and pop in a 400°F/200˚C oven for 15-20 minutes or to desired crispness.
4. Let them cool for five minutes, then enjoy with reckless abandon—they’re veggies after all!

For additional guidance and exact proportions, be sure to watch the video below. It also includes an awesomely simple recipe for a dipping sauce on the side.
For the dipping sauce, you will need a few extra ingredients, including greek yogurt, lemon juice, garlic salt and teaspoon pepper. Simply mix all of the items together, and you’ll have the perfect dip to accompany your delicious, warm fries!
Be warned: The recipe says it serves two, but we recommend doubling, tripling or even quadrupling it because they are seriously that good. We promise you’ll never look at carrots the same way again.
These look and taste just as delicious as traditional french fries, which makes them a great dupe if you’re desperate to get your family eating some vegetables. Healthy never tasted so good!
