Strawberry Cheesecake Chimichangas? You had me at cheesecake! Seriously, I think I’m in love with this recipe. What could be better than fruit with cream cheese and sugar encased in a deep-fried tortilla coated in cinnamon and sugar?

Besides the ingredients, there are two other things that make this concoction completely amazing. One, it’s easy to make and does not require a deep-fryer. Two, the bloggers recommend having it for breakfast. Can you imagine a more deliciously decadent meal to start the day? I certainly can’t.
OK, so let’s just find out how to make these things already.
First, use a mixer to combine sour cream, cream cheese, lemon, sugar and vanilla. Next, add the sliced strawberries. Yum! Stop here to taste test!
Divide the mixture between six flour tortillas and roll those bad boys up to make sure none of that sweet mixture escapes from the tortilla. You can use toothpicks to hold in place if necessary.
With some oil in a frying pan, fry the tortillas until they’re golden brown. Once they’ve been given the proper time to cool, roll them in cinnamon and sugar.
