10 Healthy Meals For People Who Don’t Like Salad

Cook. Eat. Enjoy. Repeat.

I live in L.A., the land of kale, spinach, and the ever-mysterious green juice. No matter where you go, there’s 1,001 salad options everywhere.

But, if you’re a Midwest girl like me, raised on pot roast and potatoes, what do you do? It’s not like I don’t like salad (it’s okay… yet pretty boring and the last thing I’d choose to eat); but, I don’t see the point of it and don’t enjoy being hungry again a couple hours later.

However, I also realize that I cannot live on meat and potatoes alone. So, I went out and explored other healthy eating options with enough protein to keep me full until my next meal.

1. Green Goddess Hummus Sandwich

Not only does hummus have protein, but it’s tasty, too. This recipe calls for cucumbers on the sandwich, but you can really add anything to hummus. (I love it with avocado and Gouda cheese, for instance.)

2. Salmon Salad Sandwiches

I don’t even like fish, but this sandwich is delicious! Try using King’s Hawaiian Sweet Bread and… yum!

3. Avocado And Cheddar Cheese Sandwich

This is my all-time favorite sandwich, chock full of protein. Even though I am not a lettuce fan, butter lettuce adds a nice flavor to the ensemble.

4. The Best Cranberry Tuna Salad Ever

Who thought to add cranberries to tuna salad, right? Well, once you do, you’ll never skip that step again. This YouTube video will show you how easy this is to make (and it’ll keep you full until it’s time for dinner!).

5. Lemony White Bean And Arugula Salad

If you thought white beans were tasty before, with lemon, they’re way, way better. After you make this, all you’ll say is, “More, please.” Get the recipe.

9. Chicken & Shrimp Jambalaya

You’ll think you’re in the South when you cook this up in your Crock-Pot. Pair it will some great cornbread stuffing and you’re well on your way to such a filling meal that you can probably skip dinner!

10. Egg Salad Bento Lunch

This is the cutest little meal—and it has four main parts:

  • Egg salad on a bed of lettuce
  • Slices of cocktail-sized pumpernickel bread
  • Cherry tomatoes mixed with broccoli florets
  • Blueberries mixed with yogurt (I prefer using Greek) and bananas.

You are sure to love all the different flavors!
