This Stuffed Sweet Potato Recipe Will Get You In The Mood For Fall

If apples are the fruits of fall, then sweet potatoes are the vegetables! These traditionally orange-fleshed root vegetables are high in beta-carotene, vitamins B6, C and E, iron and potassium. And like apples, sweet potatoes are delicious just about any way you cook them! So what could possibly be better than a recipe that combines these two tasty fall treats?

The blog Abbey’s Kitchen has come up with the yummiest possible sweet potato and apple combo with this recipe for Swiss cheese, caramelized onion and apple twice-baked sweet potatoes. As the name suggests, these sweet potatoes are jam-packed with so many good flavors you’ll want to make them all season long!

In addition to Swiss cheese, apple and caramelized onion, the recipe also calls for turkey sausage, Parmesan cheese, maple syrup and pecans — which makes these stuffed sweet potatoes a meal in themselves! Just add an appropriate beverage (a fall-inspired beer, maybe?) for the perfect weeknight dinner.
