If you’re looking for a filling, flavorful soup that will chase the winter blues away without blowing your net carb count for the day, look no further than Bacon Cauliflower Soup. This keto-friendly chowder is perfect for dinner with your family, as kids and adults alike will love the homey, comforting texture. Over at Damn Delicious, Chungah creates her Cauliflower Chowder with a head of cauliflower, chicken broth and 2% milk. But you can also swap in heavy cream, which some people believe is the best form of dairy for those who are counting carbs. Plus, this will make the chowder even more creamy and decadent!

Chungah also thickens her soup with traditional white flour, but if you’re trying to avoid refined flour altogether, consider using cream cheese or sour cream (both of which are keto-friendly) to thicken your chowder. Pureed veggies also work as a low-carb thickener, which means you can steam and then blend cauliflower and then add it to your soup (or, alternately, just use an immersion blender when your soup is prepared and on the stove). If you want to make this recipe gluten-free, use GF flour instead. Alternately, skip the flour altogether as discussed above, and thicken it by using a dairy alternative like cream cheese or by adding pureed veggies. You could also use a keto-approved flour like Almond Flour or Coconut Flour.
