St. Patrick’s Day is the one day of the year when everyone is Irish. People wear green and, in some cases, they hit up the local pub to enjoy a few green drinks, too.
As an actual Irish gal, I must admit that my ancestors aren’t exactly known for their party snacks and sweets. However, with some Baileys Irish Cream and a little bit of that luck of the Irish, chefs can transform an everyday dessert into one worthy of the holiday. Say “top o’ the morning” to this luscious Baileys Irish Cream Cheesecake.
This Baileys Irish Cream Cheesecake recipe comes to us from Oh My Goodness Chocolate Desserts and we couldn’t think of a better name for this website if we tried. Food blogger Vera describes this dessert as “a cake of perfect taste” as well as “sinful and decadent” and, well, it certainly looks like it.
The recipe starts with Oreo crumbs and melted butter blended into a sweet, chocolatey crust. On top of this crust sits, you place your cheesecake layer.
The ingredients are actually pretty simple. Cream cheese, sugar, cornstarch, eggs and vanilla extract make up the classic cheesecake mixture. But it’s the 1/2 cup of Baileys Irish Cream mixed in that takes the cake from ordinary to something that could possibly replace the pot of gold at the end of the rainbow.
To complete this triple later of chocolate, creamy goodness, you’ll make a ganache with heavy cream and semi-sweet chocolate baking chips. This layer tops off the cake after its been allowed to chill overnight. And while you may not want to wait that long to eat this dessert, we think it’s worth fighting the temptation.
