Peanut butter cup cake roll is surprisingly easy to make

Crazy For Crust

In case you’re not familiar with the buckeye, it’s a cookie made in the image of the nut that comes from the state tree of Ohio: the buckeye. A buckeye cookie has a peanut butter center with a rich chocolate coating on the outside.

This peanut butter cup cake roll from Crazy for Crust is a fun twist (literally!) on the buckeye treat beloved by Ohioans and many others. While this dessert looks fancy and complicated to make, recipe creator Dorothy Kern promises the process is easy. She even writes, “Why did it take me so long to make a peanut butter cake roll??!!”

In addition to peanut butter and baking ingredients you probably already have on hand in your kitchen, you’ll need some Reese’s peanut butter cups, cream cheese, heavy whipping cream and brewed coffee — though if you’re missing that last ingredient, you can sub in water.

You will also need jellyroll pan to make this cake. This special baking pan keeps the cake thin enough to roll around the yummy filling you’ll spread on the chocolate cake.
