An Affair From the Heart

If you’re looking for a taste of summer, you don’t have to wait until the calendar flips to June to experience it! Coconut always seems to capture the essence of the season with its smooth, luxurious flavor. We found a recipe for coconut cream poke cake that is sure to instantly transport you to the tropics!

In case you need a refresher on poke cake, this decadent dessert amps up the flavor by poking holes in an already baked cake and pouring a luscious filling inside. Poke cakes can come in all sorts of flavors, such as strawberry-lemonade, gingerbread and even hummingbird upside-down cake! So, it only seems natural that coconut cream would make a wonderful addition to the poke cake collection!

Enter this coconut cream poke cake recipe posted by An Affair From The Heart. It starts out with a basic box of white cake mix. However, the author takes the box mix to a whole new level by using milk instead of water. She also suggests adding in some instant pudding mix and coconut extract to really bring out the flavor.

An Affair From the Heart

As for the filling, the simple combination of coconut cream and sweetened condensed milk ups the punch for those with a sweet tooth. But the recipe’s author claims the frosting is what makes this cake something special. She adapted a whipped cream frosting to make, resulting in what she calls, “by far the best frosting I have ever eaten.”

To make the frosting, combine the cream cheese, sugar and coconut and almond extract until you create a smooth mixture. Then, using a whip, slowly add in the heavy whipping cream and shredded, sweetened coconut. The instructions state to “whip until stiff peaks form.”

The frosting ends up tasting more like coconut cheesecake than frosting, according to the recipe. And we’re all about anything cheesecake! Just get a look at this creamy deliciousness below:

Between the frosting and the cake itself, this dessert is basically a coconut lover’s dream come true.

The hardest part of making it will probably be having to wait the five hours it takes for the cake to set and cool in the refrigerator. We’re not sure your family will be able to keep their hands off this delicious cake until then. But from the looks of it, it will be worth the wait!
