These Coors Light Ice Pops Are Perfect For Summer

One of my favorite summer treats as a kid was popsicles. There was just something about running to the freezer and grabbing one to cool down before heading back outside to ride bikes and play games with my neighbors.

While there is certainly no shame in enjoying a refreshing treat as an adult, there is a bonus to no longer being a kid: We can now add alcohol to our pops to make the afternoon snack even better.

You can find some boozy pops in stores, but if you’re a beer drinker, you might prefer this recipe from Coors Light.

Combining a paleta, or Mexican-style ice pop, with michelada, a Mexican beer typically made with lime juice and spices, these Coors Light Palecheladas sound like the ultimate summer refresher. The brewery teamed up with chef and paleta-maker extraordinaire Fany Gerson of New York’s La Newyorkina shop to create the frozen treat.

The recipe combines Coors Light with the spicy, tangy flavors of a classic michelada, fused together and frozen into a tasty paleta. Along with Coors Light, you’ll also need some sea salt, lime juice, hot sauce and Worcestershire sauce.

Coors Light Palechelada

Makes 4-6

Ingredients

½ teaspoon of kosher or sea salt
3 ounces of fresh lime juice
1 tablespoon of hot sauce
1 1/2 teaspoon of Worcestershire sauce
2 12-ounce Coors Light cans
1/4-1/2 cup chili salt blend. Use a store-bought blend or make your own by mixing coarse salt and your ground chili of choice.

Directions

With a spoon or whisk, mix the salt, lime juice, hot sauce and Worcestershire sauce in a pitcher. Once mixed, add the beer and mix until it’s all combined.

Pour mixture into popsicle molds and freeze for approximately five hours.

To release the pops from molds, dip the paleta in warm water to help loosen it. Carefully pull it out of the mold, dip it in the chili salt blend and enjoy.
