This creamy broccoli soup with cheddar crisps looks fancy but is really easy to make

Don’t you love dishes that look incredibly complicated and restaurant-quality, but are actually deceptively simple to prepare? It’s the best way to impress the people you are cooking for without having to work yourself to death in the kitchen.

That is the story with this recipe for creamy broccoli soup topped with cheddar crisps. It looks like something you would find a quaint little bistro, but it’s actually a cinch to make for yourself at home!

Here are the ingredients you’ll need:

  • 2 tablespoons extra virgin olive oil
  • 1/2 white onion, diced
  • 3 celery ribs
  • 1 clove garlic, minced
  • 1 1/2 pounds broccoli
  • 3 1/2 cups water
  • 4 ounces sharp cheddar cheese
  • salt and pepper to taste

First, you heat a little olive oil in your pot until it begins to slightly shimmer. Then you add diced onion, celery and a clove of garlic.

Then, add 3 1/2 cups of water and 1 1/2 pounds of washed, trimmed broccoli. Simmer over moderate heat for 10 minutes and let the broccoli cook down.

Now for the cheesy topping! Take cheddar cheese and gently lay small handfuls of it on top of a parchment paper-lined baking sheet. Put it in the oven at 350 degrees for 18 minutes. (But stay close by and check on the crisps now and then, as ovens can vary and the crisps can burn quickly if you are not careful).
