This Cucumber Lime Lavender Spritzer Is The Most Refreshing Mocktail

Move over, margaritas. Take a seat, rosé. There is a new summery drink in town, and it’s a fresh, fruity, floral mocktail that tastes like sunshine in a glass.

Yes, this is a mocktail, meaning there is no alcohol, which makes it perfect for family parties or baby showers or any other event where you want to be sure and offer a non-alcoholic drink to your guests. (However, we do also have an alcoholic version of this drink, so be sure and scroll to the bottom if you want to check out.)

This mocktail recipe comes from The Diary of a Debutante, and it’s made with fresh peeled cucumber, lime juice, club soda, fresh mint and dried lavender. This elegant drink comes together in just under 30 minutes.

When preparing this recipe, make sure to use culinary lavender, rather than lavender that is meant for aromatics and crafts. A member of the mint family, culinary lavender differs from traditional lavender in that it has less oil. It is less potent and has a less intense smell, so when you enjoy it in recipes, you won’t feel as though the lavender is overpowering. If you can’t find it at a store near you, it’s also available on Amazon.

You’ll create a simple syrup with the sugar, mint and lavender. After you slice and peel the cucumber, drop it into the blender with the lime juice to puree it. The syrup and puree come together with the club soda, and then you’ll finish it off with a lovely garnish of mint leaves.

If you’d rather prepare a cocktail for your guests, you might try a lavender Collins. This twist on the classic Tom Collins, a gin cocktail made with club soda, sugar and lemon or lime juice, is from a recipe at Fox and Briar.

Fox and Briar’s homemade lavender syrup is the perfect floral complement to a sweet cocktail made with gin, lemon juice and soda water. You can also try cucumber-flavored soda water to give your lavender Collins a touch of fresh cucumber taste, as well as slice up a few cucumbers as a garnish.
