Frito Pie Casserole is the ultimate comfort food

With all of winter ahead of us, it’s definitely the season for comfort food and few things compare to a rich, delicious, simple-to-make casserole. Casseroles are one of the most versatile dishes out there, and the best thing about them is that you really can’t go wrong.

The blogger behind The Cookin’ Chicks has a recipe for Frito Pie Casserole that proves no ingredient is off limits. As long as you have a hefty topping of gooey cheese on top, you’ll always get an A+ in the taste department.

With only six ingredients, one of which is a bag of Fritos chips, it’s a cost-efficient dish to whip up when you’re short on time and in need of a crowd-pleaser.

In the recipe, blogger Kristin uses ground turkey, but you can always opt for beef if you’d prefer. In a little over half an hour, you’ll be all set with a pan of Frito Pie Casserole, similar to a “California taco.” For extra layers of flavor, top the casserole with sour cream, salsa and green onions.

For a portable twist on the Frito casserole, blogger The Girl Who Ate Everything offers a fun recipe for walking tacos. These “tacos” are made right in the Frito Lays bag and couldn’t be easier to put together. Perfect for any party, you simply take a snack-sized bag of chips (any flavor you like works, whether that be Fritos or Doritos), crush them up and fill the bag with taco meat and any taco toppings your heart desires. Then, just walk, eat and be merry, all at the same time!

If you’re in need of something a bit more hearty and complex, check out blogger Fav Family Recipes, who makes a Southwestern Chili Casserole with Fritos that combines crunchy Fritos with flavor-packed chili for a meal that’ll have everyone stuffed and satisfied. The chili is packed with beef, onions, corn, beans and olives.

She recommends topping the casserole with things like onions, lettuce, diced tomatoes, sour cream and salsa, but pretty much anything you’d use on a Mexican dish works! As an added bonus, this recipe can also be made gluten-free by switching out the taco seasoning for a gluten-free variety.
