The One Pot Chef created this great recipe that makes perfect chicken breasts plus you get the added benefit of roasted veggies. Yum.
Ingredients:

- 19 ounces small red potatoes, quartered
- 1/2 pound chopped carrots, trimmed and peeled
- 1/4 cup olive oil
