How to make this easy cheesy meatball tater tot casserole

To get through a long and cold winter, there’s nothing better than warm, satisfying casseroles. A good casserole will please even the pickiest eaters, makes for great leftovers and is easy to prepare. Casseroles are also the ultimate comfort food and will warm up your belly and your soul after a frigid day.

This easy cheesy meatball tater tot casserole from Cook Eat Go fulfills all of those requirements, and blogger Jenny notes that it’s also a great recipe to get kids involved in the kitchen. With just a few simple ingredients (including kids’ favorite, tater tots), this simple casserole is bound to be a hit with the entire family.

Though this is definitely a meat-and-potatoes recipe, a casserole provides the perfect opportunity to sneak in some vegetables. A version from Hy-Vee incorporates green beans and bell peppers, but I can see a number of other vegetables working as well, such as broccoli or mushrooms. Your kids will be so focused on the tater tots and cheese, they won’t realize all the vitamins and minerals they’re getting as well.

Although these casseroles can be made with premade meatballs, if you’re feeling up to it, you can also make them from scratch. This recipe from My Tiny Oven starts with meatballs from scratch and looks absolutely delicious. Jen, the blogger behind it, recommends serving it with a side salad or steamed broccoli or cauliflower, which you can dip into the cheesy goodness. Great idea!

All of these recipes use beef- or pork-based meatballs, but you could also easily substitute faux meatballs if you’d like a meatless version.
