Summer is right around the corner, so it’s time for refreshing recipes to reflect the warmer temperatures. If you’re looking for a new sweet treat, look no further than these scrumptious lemon brownies from Kitchen Fun With My Three Sons.

These bright, lemon flavor-packed brownies aren’t technically brownies at all, seeing as they have no chocolate. They could more rightly be considered “blondies.” But whatever you decide to call them, one thing’s for sure — they’re downright delicious.

Start with some pantry staples: butter, flour, eggs, baking powder, sugar. You’ll need lemon zest for both the batter and the lemon glaze. If you’re intimidated by the prospect, the proper tool is a must. A lemon zester is best — but in a pinch, you can also use a veggie peeler.

Just like a frosty glass of lemonade, this lemon dessert is refreshing on a hot summer day.

Another take on this tasty treat comes courtesy of I Heart Naptime, and the recipe comes together in just 30 minutes. Blogger Jamielyn Nye suggests serving with vanilla ice cream, a dollop of whipped cream or even homemade lemonade ice cream if you really can’t get enough lemon flavor.

There are more, and like the other recipes, the lemon brownies recipe @paisan_the shared on Twitter uses lemon zest in the glaze. Her photo really shows off just how lemony they are!

Looking for variations? Nye of I Heart Naptime recommends some twists, like adding shredded coconut, blueberries or white chocolate chips to the batter. These blondies can also be frozen, so feel free to wrap in plastic wrap, then foil. Pop them in the freezer to enjoy later. Thaw at room temperature.
