Malibu Rum Popsicles Make The Most Refreshing Summer Treat

This year, the closest experience many of us will have to a tropical beach vacation will probably be in the form of a coconut-flavored cocktail or a frozen tropical fruit dessert. Luckily, we found a refreshingly spirited popsicle recipe that will transport you to a beachside cabana in no time.
These popsicles are easy to whip up and there are plenty of variations you can try based on your preferences. Want to add some shredded coconut? Go ahead! Would a handful of cacao nibs add a chocolatey kick? Try it out! The popsicle mold is your oyster.
One recipe for boozy coconut lime popsicles can be found on The Diary of a Debutante, where blogger Stephanie calls for full-fat coconut milk, limeade, Malibu rum, lime zest, maple syrup and honey to be whipped together in a blender until smooth and creamy. Pour the concoction into popsicle molds and pop in the freezer.
When the popsicles have frozen solid, remove them from the molds and enjoy!
Pro tip: If you have trouble removing the popsicles, run the molds under warm water and then watch the popsicles magically release.
The Vegan Huggs blog has a similar recipe that’s even simpler, focusing on just five ingredients: coconut milk, maple syrup, lime juice, lime zest and salt. Blend it all together and pour into popsicle molds for a creamy, citrusy taste of the tropics. (You can add in some rum if you’re making grown-up versions!)
