8 Meals You Can Make In 15 Minutes Or Less

When we get home from work, we all have one thing in common: we want to eat. Immediately.

Unless we’re super-organized and have had a crock-pot recipe simmering all day (or waiting for us in the freezer to throw in), we want something quick and easy — but not fast food (again).

What’s a hungry, time-deprived person to do? Each of the recipes below can be whipped up and put on your dining room table in under 15 minutes! Don’t believe me? Try one out for yourself and see!

1. Cheesy Chicken Meatball-And-Tortellini Soup

Soup is such a simple, yet hearty, meal choice, especially when it comes to making something quickly.

This recipe from Fitness magazine is sure to please. It calls for packaged meatballs, but I prefer to use my own, which I keep a stash of in the freezer. I highly recommend it!

2. Greek Chicken Cutlets

I absolutely love this recipe from Martha Stewart — it’s like eating a Greek salad on top of chicken! Not only is it delicious and healthy, but it’s also so colorful. (Don’t be fooled by the “under 30 minutes” claim, because it really only takes 15 minutes or less to prepare!)

3. Sirloin Steak With Dijon-Port Sauce

Of course, the secret to making this steak from My Recipes so fast is having it sliced up in one-inch thick pieces. And the Dijon-port sauce is unlike any other, so be sure to try this dish out either to impress your guests — or yourself.

4. Black Bean Quesadillas

This recipe from black bean quesadilla from Eating Well is filling and hearty, and it’s a perfect way to use an avocado that’s about the go bad.

5. Open-Face Chicken Caprese Sandwiches

Who doesn’t like Caprese? Personally, this is one of my favorite sandwiches — and I can’t get enough of this recipe from the blog IowaGirlEats. You can make the sandwiches with or without chicken, and the toasted bread makes them look way fancier than they really are!

6. Garlicky Broiled Salmon and Tomatoes

Fish is always an excellent choice if you’re running low on time. There’s only eight ingredients in this dish from Real Simple — including tomatoes, paprika and thyme — so it’ll be done before you know it.

7. Pasta With Fresh Tomatoes And Pine Nuts

The pine nuts mixed with the tomatoes and garlic make this a fun, easy recipe from Delish that’ll surely make people have seconds. You can also sub the pasta for zoodles (zucchini noodles). Yum!

8. Beef, Mushroom, & Greens Stir-Fry

This recipe from BBC Good Food is all about the soy sauce and ginger. The combo makes this stir-fry the best you’ve ever made … especially in under 15 minutes!
