No-bake eclair cake is the easiest spring dessert

The Country Cook

When the weather starts to warm up, no-bake dessert recipes are essential to have on hand, as they don’t require you to turn on the oven to produce a decadent treat. Being able to throw together a dessert, tuck it away in the fridge and then enjoy it at the end of a long day is about as good as it gets.

Brandie of The Country Cook has a recipe for a no-bake eclair cake that ticks all the ideal dessert boxes: simple ingredients, no oven required and it’s chocolatey and creamy.

Chocolate eclairs are usually a pastry dessert filled with vanilla cream and topped with a thick, rich layer of chocolate. But this no-bake recipe proves you can enjoy all the best parts of an eclair without the hassle of baking and filling fussy pastry dough.

Right off the bat, we give this recipe top marks because many of the ingredients are items you likely already have in your refrigerator or pantry. All you’ll need to make this decadent dessert are five ingredients: graham crackers, whipped topping (not whipped cream), instant vanilla pudding mix, milk and chocolate frosting.

You’ll also need some mixing bowls, a 9-by-13-inch baking dish, a microwave, a rubber spatula and measuring cups. Check out the full recipe on The Country Cook for a breakdown of all the ingredients and equipment needed.

The magic of this recipe is the layering of ingredients and how everything comes together once it’s set in the refrigerator. The foundation of the cake is made with graham crackers, which are topped with the mixture of creamy pudding and whipped topping.

One layer at a time is stacked into the baking dish and then the cake sets in the refrigerator overnight to achieve the perfect consistency.

The wait is worth it, though, to enjoy this light, creamy confection that’s perfect for springtime.
