No-bake Key lime cheesecake is a zesty, decadent summer treat

Sometimes, a cheesecake craving can silently sneak up on you and you just have to have it! And, now that summer is here, we think a cheesecake that’s light and packs a citrus kick can really hit the spot. We found a recipe for a no-bake cheesecake that looks so light and delicate, it might honestly float away if you’re too slow with your fork.

Michelle, the author and culinary artist behind Brown Eyed Baker, posted this No-Bake Key Lime Cheesecake recipe and a few things stood out to us.

First, it looks so easy to make! Typical cheesecake recipes can be a bit challenging. Yet, just about every element of this one is simple. The crust starts with boxed vanilla cookies, sugar and butter. It’s the ideal sweet-yet-mild foundation for the flavorful, creamy cake. And, of course, the crust doesn’t even need any time in the oven.

Second, Michelle uses white chocolate in the cheesecake filling to counterbalance the tangy Key lime. It’s important to remember that Key limes have a stronger, more tart flavor than regular limes. Michelle recommends only using fresh Key lime juice for this recipe, along with the peel of a regular lime. Each has a different flavor and texture and you need both to get the right combination for this cake.

Finally, we also like how this cake can be refrigerated or put in the freezer to set. It all depends on what kind of texture you like for your cheesecake. For something a little creamier, put it in the refrigerator overnight. Or, for something a little more firm, pop it in the freezer and serve without thawing.
