This No-Bake Rainbow Unicorn Cake Is Perfect For Summer Birthday Parties

Now it’s even easier to bring unicorn magic into special occasions, thanks to this no-bake rainbow unicorn cake.
This cake is so simple, delicious and Instagram-worthy, you’ll be reaching for the recipe anytime you have a summer celebration on your calendar.
There are a few different approaches you can take with a no-bake unicorn “poop” cake. At Momdot, the cake is made with cream cheese and a graham cracker crust.
Pink, purple, blue and orange gel food dyes are used, along with candy melts to help create those gorgeous rainbow hues.
The candy melts are drizzled on top, and they harden to create a crunchy, pretty topping for your cake.
The cake is then covered with unicorn sprinkles (we like this unicorn sprinkle mix from Amazon).
This cake does not need to bake, which makes it perfect for these hot summer months. Instead, it just chills in the fridge for at least two hours, which means you can make it the night before a party as well.
Chocolate sandwich cookies are used for the base of the cake in place of graham crackers, but you can use whatever cookies you have on hand.
The use of the pudding cups means this recipe is a breeze to make, as it will save you time and stress when it comes to the food-coloring process.
