This Pumpkin Cheesecake Lasagna Is The Ultimate Holiday Dessert

Move over, pumpkin pie.

There’s a new dessert in town, and it doesn’t even require you to turn on your oven.

If you don’t mind drooling a bit until you can make this pumpkin cheesecake lasagna, read on. The folks over at Delish have all the details for creating what they’re calling “the pumpkin cheesecake equivalent of Mt. Everest.”

“Call it whatever you want—we’re calling it effing amazing: graham cracker crust, layers of mousse-like pumpkin cream, cheesecake pastry filling, whipped cream, caramel drizzle. We’re basically dead,” says Delish.

To start, you’ll want to combine cream cheese and sugar with an electric mixer until the mixture gets light and fluffy. Then, slowly add in heavy cream and continue mixing until stiff peaks form.

In a separate bowl, mix milk, vanilla pudding mix, pumpkin puree and pumpkin pie spice until the pumpkin cream mixture gets thick.

Now for the fun part—assembling the “lasagna.” If you’re not familiar with dessert lasagnas, they’re just like their savory counterparts except they typically don’t require any baking. You can pretty much make anything into a dessert lasagna, as long as you’re layering one sweet ingredient on top of another.

Spread a dollop of the cream cheese mixture along the bottom of a glass baking dish. Top that with a layer of graham crackers, followed by half of the pumpkin cream mixture. Drizzle with caramel and repeat until you run out of ingredients. Your top layer should be cream cheese.

Cover the pan loosely with plastic wrap and put the whole thing in the refrigerator for at least four hours.

When dessert time arrives, pull out the lasagna and drizzle with caramel. Garnish with chopped or whole pecans. It’s messy, but so worth it.

There are a few variations of this recipe, including this one from Cooking Life to the Fullest, which uses whipped topping, powdered sugar and white chocolate instant pudding. This one from I Heart Naptime makes a graham cracker crust for the bottom layer.

Whichever option you choose, your guests are sure to ask for the recipe after they clean their dessert plates!
