These slow-cooker queso chicken tacos are going to be your new weeknight favorite

Sweet Little Bluebird

What’s better than taco night? Taco night that comes together in the slow cooker and makes dinner super easy and stress-free.

This recipe for slow cooker queso chicken tacos is a simple dinner recipe that you need to keep in your repertoire. Made with easily accessible ingredients including diced tomatoes, chicken broth, taco seasoning and salsa con queso, this recipe from Sweet Little Bluebird turns a basic package of boneless skinless chicken breasts into authentic, flavorful tacos that you would swear came from your favorite taqueria.

In terms of taco seasoning, you can use a store-bought brand or you can easily make your own with a combo of cumin, chili powder, salt, pepper and paprika. The same goes for the queso: you can purchase a store-bought jar, or make your own. If you have never made your own queso before, it’s not too difficult, especially if you use Velveeta as a base. But you can also avoid processed cheese products if you desire, and make your own queso with cream cheese, half-and-half and cheddar cheese. (This recipe for homemade queso from A Spicy Perspective is a personal favorite).

To serve the tacos, you top them with your favorite taco toppings, such as chopped cilantro, lettuce, onions or pico de gallo. Serve with hard or soft shell tacos, or in crunchy romaine lettuce for a low-carb version of taco night.
