Recipe turns strawberry shortcake into summery cookie

Strawberry shortcake is a classic summer dessert, and now you can enjoy it in cookie form as well.

This recipe for strawberry shortcake cookies from Spoon Fork Bacon will quickly become your favorite new take on an old standby. The cookies are made with a cup of fresh strawberries and are topped with a vanilla glaze made of powdered sugar, milk and vanilla extract.

The star surprise ingredient in these light, fluffy cookies is nonfat Greek yogurt. Teri and Jenny, the blog’s authors, explain that it takes the place of egg and milk in the recipe and makes for a slightly healthier dessert. The overall amount of sugar in the cookie is on the low side as well.

If these cookies taste half as good as they look, I’m going to need to make a double batch! I think serving these alongside vanilla ice cream would be delicious as well.
