Everyone knows that toast is having a renaissance. Avocado toast, nut butter toast, yogurt on toast—the list is endless, and endlessly Instagrammable. But for those of us who aren’t on the toast train for one reason or another, fear not: Sweet potato toast is here, and you’re going to love it.
Yes, it’s exactly what it sounds like: pieces of sweet potato that you cook and use as you would a slice of toast. Given the dual flavors of the tuber (both sweet and savory), this can be any kind of breakfast or snack you wish. Top with almond butter and cinnamon or a fried egg and a sprinkling of cilantro and hot sauce. Either way, it’s delicious.
But how do you make sweet potato toast? Doesn’t it take forever? And why sweet potato toast when you could eat…literally anything else? Well, unlike many bread replacements, sweet potatoes are naturally gluten-free, high in fiber, and absolutely stuffed with healthy micronutrients.
Now to the nitty gritty: First, scrub your sweet potato and slice it. You don’t have to peel it, and you shouldn’t, as that’s where a lot of the fiber and nutrients live. Cut a slice off the bottom of the sweet potato so it sits flat on the cutting board. Cut the rest of the sweet potato into 1/4-inch slices. Try and keep them as even as possible: If they’re too thin, they’ll burn. Too fat, and they won’t cook through.
Now, turn those potato slices into “toast.” You can put them in a standard toaster or a toaster oven. Set to the highest heat setting and keep toasting the slices until the surface is beginning to brown and the inside is soft when tested with a fork. It might take about 15 minutes per batch, depending on how powerful your toaster is. You can also use your oven to make a big batch, which is especially handy for meal prepping and quick breakfasts for the whole family. Preheat the oven to 450 degrees Fahrenheit, place sweet potatoes on a lightly greased pan and bake for 15 to 20 minutes, flipping every five minutes or so.
