Rice is such a filling and delicious side item that goes with practically anything. It’s also super easy to prepare, so, I don’t know about you, but it’s always the first thing I reach for when I need a little help with dinner.

It’s not necessarily always the best thing for your diet, but there’s now a way to cut the calories of rice in half.

I’m all for delicious rice at half the calories, and if you are, too, then you need to add this hack to your cooking repertoire. Be warned though, it’s not nearly as quick to make if you do it this way.

However, it is a great recipe to make a night and then have for dinner the next day. Basically, if lower calories and meal prep is your kind of thing — this is soon to be your new favorite way of preparing rice.

So, here’s all you have to do. According to Good Housekeeping, you can bring water to a boil and add a teaspoon of coconut oil along with a half cup of white rice. Then, let the rice simmer for 20-40 minutes. Once cooked, refrigerate for 12 hours.

According to the same article, cooking the rice this way will reduce the number of calories your body intakes from the rice by 50-60%. Pretty neat, huh?

The  249th National Meeting & Exposition of the American Chemical Society found that the coconut oil makes the starch in rice resistant to digestive enzymes which means less sugar that gets absorbed into the body.

So, add just one more thing to the list of what makes coconut oil magical. Because it can now even reduce the calories in rice. I’ve got water boiling and the coconut oil ready, how about you?
