This ‘inside-out’ omelet that’s going viral is easier and cheesier than the traditional version


There is a breakfast trend that’s going viral on TikTok, and although it started as a low-carb breakfast idea, anyone who loves savory, cheesy morning meals is bound to crave this easy dish. While many people say that it reminds them of a breakfast quesadilla, the creator credited with making it calls it an inside-out omelet.

All you need to make this recipe is a couple of eggs, some shredded cheese and anything else you would add to a traditional omelet. You can watch the preparation in this video by TikTok creator Jackie Hartlaub, whose profile name is the same as her blog, Low Carb State of Mind.

Start with a nonstick skillet or a pan coated with non-stick spray. Heat the pan over medium heat and sprinkle on a layer of your favorite shredded cheese. Once the cheese starts to melt, add two beaten eggs, tilting the pan to spread the eggs evenly over the top of the cheese.

As the eggs cook, add your choice of toppings. Hartlaub made hers using chopped, cooked bacon and pickled jalapenos, but yours can be as creative or as simple as you wish. For instance, if you only want eggs and cheese, you could leave it at that, but you might want to incorporate diced ham, bell peppers and onion, mushrooms, or any variety of meats and vegetables.

Once the eggs have set, Hartlaub seasons the inside-out omelet with salt and pepper. After using a silicon spatula to flip half of the omelet over onto the other half, she removes the crispy, cheesy egg dish and plates it. Hartlaub says she likes to top hers with pico de gallo and Greek yogurt.
