Sneak veggies into breakfast with this sweet pancake recipe
I have a confession to make. I’m a 49 year-old-woman who only recently started to get into eating her vegetables. In my quest to live a healthier life and lose weight, I had to take a serious look at my eating habits and I realized the only vegetables I ate regularly were potatoes, corn, and peas. Not bad, but not exactly a wide variety of the healthiest options.
Sound familiar? Maybe it’s you or your kids who need some extra vegetables in their life. To help myself incorporate more veggies into my daily routine, I look for recipes that creatively use vegetables into dishes I normally love. Is it sneaky? Maybe. But, it works!
Getting vegetables into breakfast can be really tricky, but I found a recipe that looks good enough to give a try! The Two Peas & Their Pod blog has a recipe for Whole Wheat Zucchini Pancakes that look pretty tasty and supposedly has the mildly sweet taste of zucchini bread. I’ve made “zoodles” before for lunch or dinner, but this recipe looks like a clever way to slide some veggies into the most important meal of the day.
These pancakes apparently passed the kid test, according to recipe author Maria Lichty, so they’ve got to be pretty good, right?
To make these pancakes you’ll need the following ingredients: flour (the recipe calls for white whole wheat flour, but you can use all-purpose or regular whole wheat if that’s what you like or have on hand), baking powder and baking soda, zucchini, salt, brown sugar, buttermilk, eggs, butter, vanilla extract, nutmeg, cinnamon, granulated sugar, and maple syrup to cover the pancakes when they’re ready! You will need to make sure to grate the zucchini pretty fine to make sure it doesn’t stay too chunky in the pancake batter. But the veggies fold in nicely to the batter and still allow the pancakes to rise well! Once you add them, the method is similar to that of any good pancake recipe.
