If you’re like me, you’re a sucker for Lotus Biscoff cookies — those crunchy little Belgian biscuits, called Speculoos in Europe and made from flour, brown sugar, butter and spices. Even better? Lotus Biscoff Cookie Butter, which is spreadable and delicious and I’m not ashamed that I eat it off a spoon.
So you can imagine my reaction to the news that Lotus Bakeries is releasing a cookie butter ice cream line. Bliss! The company’s “super-premium” ice creams, made with cream, Biscoff cookies and cookie butter, are actually being found in U.S. stores already.
Lotus Biscoff Cookie Butter ice cream will come in five flavors: original, Belgian Chocolate Chip, Blueberry Cheesecake, Chocolate Brownie and Salted Caramel. It’s also going to come in a frozen bar on a stick. The ice creams are all made with Biscoff cookies, cookie butter and dairy cream.
The pints started rolling out last month in the U.S., but the bars aren’t supposed to be available until October. You can find the Lotus Biscoff products making an ongoing roll-out at Safeway and Albertsons stores in northern California, Oregon, Idaho and Arizona. The company promises us that other retail chains will get them soon.
Apparently, though, the bars are already available in the U.K., where Instagram user @lauraslovelyhome posted that she found hers at British grocery chain Waitrose.
Described in a press release as “heaven on a stick,” the Lotus Biscoff ice cream bar is dipped in cookie butter and then surrounded by Belgian chocolate. Here’s a closer look, from the U.K.’s @foodieadventurer. We’re in love!
Michelle Singer, general manager of Lotus Bakeries U.S., said in a press release, “Biscoff is exploding in the U.S. and we can’t be more excited to bring the beloved Biscoff taste to ice cream.”
The company teased the release on its Instagram all the way back in February, so the anticipation is real.
Unfortunately, some of us still have to wait a bit before we can find Lotus Biscoff cookie butter ice cream in our local stores.
Yet not all is lost for Speculoos cookie lovers. Trader Joe’s, which sells an outright imitation of Lotus Biscoff’s cookie butter, has an ice cream version of its popular item available, too.
Critics will tell you that Trader Joe’s Speculoos Cookie Butter isn’t as good as the Lotus Biscoff version. They say the caramelized sugar flavor of the Lotus brand comes through better, and that their cookie butter has more richness and sweetness. Meanwhile, Trader Joe’s version is slightly grittier, with a stronger gingerbread flavor.
But Trader Joe’s Speculoos products, some of which are pictured here from @bigfilipino, are perfect in a pinch! (They also offer a crunchy version of the nut-free butter, along with different flavors.)
Personally, we’re counting down the days until we can get this ice cream treat into our kitchen freezer. How about you?
