You might think that desserts are off the menu if you’re going to take on the keto diet. After all, how can a diet that limits sugar offer the possibility of sweets? Why, with lots of healthy fats, of course!

That’s why we are loving this Keto Peanut Butter Cheesecake recipe from It’s Simple by HowToThisAndThat. Not only is this yummy cheesecake keto-approved, but it also bakes quickly in your Instant Pot.

The ingredient list includes cream cheese, eggs, butter, almond flour, as well as keto staples like monk fruit sweetener and natural peanut butter (with no sugar added). The crust is made with butter, almond flour and monk fruit sweetener, and is pre-baked in the oven before the cheesecake filling is added.

Note: You can use your preferred keto-approved sweetener in place of monk fruit sweetener if you like.

Now, you have two options with this recipe: You can fill your pre-baked cheesecake crust with your filling, and then use your Instant Pot or similar pressure cooker to complete the baking process. Or you can opt to make an egg-less version, which requires no baking at all. In this version, your cheesecake simply needs to chill until it sets. Just make sure to follow the egg-less filling version descried above the recipe, because eating raw eggs could lead to food-borne illnesses.

If you don’t have an Instant Pot but you still want to make the egg version of the Keto Peanut Butter Cheesecake, don’t worry. You can just bake your cheesecake in the oven instead of in the pressure cooker. It will need to bake for about 40-45 minutes and then chill for a little while before you cut and serve.
