Stuffed eggplant parmesan will make you want to eat your veggies

If you’re looking to skip the carbs — but not the flavor — of pasta, this is the recipe for you. This recipe for stuffed eggplant parmesan from Delish takes marina sauce, roasted tomatoes, parmesan cheese and all the other things you love about a traditional pasta dish and serves it up in an eggplant that’s baked to perfection. So yeah, you’re definitely not going to miss the noodles when you’ve got this deliciousness on your plate.

You can create this perfect dish by taking an eggplant, cutting it in half and hollowing out the center. But don’t discard it! The meat of the eggplant will later be mixed with marinara sauce, juicy tomatoes and more to create a yummy filling.

Once this comes out of the oven, it can be served on its own, alongside a salad, on top of a bed of spiralized zucchini or however you see fit!
