Whoever’s in charge of these things really nailed it when they made October National Apple Month. It’s hard to think of another fruit that symbolizes the fall season like apples do — think candied apples, apple cider and apples for teachers on the first day of school.

And then there’s apple pie, one of the season’s most anticipated treats. If you’ve got a hankering for a sweet bite of apple pie, but don’t want to go to the trouble of baking the whole thing, check out these adorable apple pie puffs by Yumna Jawad, a food blogger who runs the site The Feel Good Foodie.

One apple makes a half dozen of these little treasures, so use a couple if you’re serving a crowd!

First off, core the apple of your choosing — no judgment here on your favorite type of apple.

Then, slice the apple into quarter-inch slices, aiming for six to eight slices per apple. The slices should look like rings.

Next, roll out a sheet of puff pastry on a cutting board. Use a pizza cutter to slice the pastry into strips; Jawad recommends a 2-to-1 ratio of strips to apple rings.

Carefully wrap each apple ring with a strip of pastry, then repeat with a second strip to create a lattice-like design around both sides of the apple. Brush both sides of the wrapped ring with an egg wash, then arrange on a prepared baking sheet.

Once all your apple rings are wrapped and egg-washed, pop them in the oven to bake. They’ll emerge with a golden, crispy pastry crust, just like a miniature apple pie. See the whole process on Jawad’s Instagram:

Immediately dip the rings in a cinnamon-sugar mixture, then plate ‘em up. For the complete apple pie experience, serve with a scoop of vanilla ice cream.
