Costco is selling low-carb, low-calorie edamame spaghetti

Amazon

Add another bullet point to the long list of reasons why folks love shopping at Costco, because the retailer has gone and done it again! It is now selling low-carb and low-calorie edamame spaghetti for all of your healthy lunchtime needs. Bye, bye, sad desk lunch. These edamame noodles are here to save the day!

Similar to other veggie-based noodles, such as zucchini noodles or spaghetti squash, Explore Cuisine’s Organic Edamame Spaghetti are made from actual edamame beans and contain only 180 calories and 20 grams of carbs per serving. Each two ounce serving contains 24 grams of plant-based protein — about half the amount needed daily for the average woman. Score!

You can get package of six for $23.02 on Amazon or add these to your cart the next time you make a Costco run!

Sure, plant-based noodles sound good, in theory. But in case you’re wondering about how this stuff actually tastes, the Amazon reviews are quite telling.

The product has mostly five-star reviews, and it seems to be great for those with dietary concerns or those just looking for a healthier option. Apparently, the taste and texture live up to regular ol’ pasta, too.

“My husband is Italian and diabetic, so pasta is a challenge. We LOVE Explore Edamame Spaghetti! The texture is very similar to pasta, the flavor is mild and works as a great carrier for sauce/gravy. So glad we discovered something that he can enjoy without spiking his blood sugar,” one five-star Amazon review read.

And there are plenty more where that came from!

Convinced to give these a try? Then you’ll need to know just how to cook them! The product descriptions suggested you can combine these with mushroom sauce or coat them in olive oil, and honestly both sound delicious.

You can find plenty of inspiration for preparing these noodles on Instagram. User @raynay_keto points out that this “pasta” is delicious with marinara, chicken and bacon. It’s also keto-friendly, according to the Instagram post:
