As we get closer to New Year’s Day, those thoughts of resolutions start creeping in. After all, with a new year comes a fresh start. And, it’s never too early to start thinking about making positive changes. Of course, one of the most popular resolutions people make is eating healthier and losing weight. If you need some inspiration, we’ve got the story for you!

Last January, Brittany Williams decided enough was enough when it came to her health.

“On January 3, 2017, I decided to make a radical change for the sake of my health, my family, and my sanity,” she wrote on her website Instant Loss. “I was 212 lbs, completely miserable, and desperate for change. We cleansed our house of processed food, stopped eating out, and stopped eating (most) grain, sugar and dairy.”

Nearly one year ago, Williams started a new lifestyle and she hasn’t looked back. She’s lost 77 pounds since then (and 125 pounds total since her highest weight.)

So, what is the secret to her major success? Williams has said one kitchen tool has made a huge difference in changing her meal prep and eating habits: an Instant Pot.

However, it wasn’t love at first sight between Williams and the kitchen gadget, which her husband brought home as a gift one day.

“My husband is a gadget guy,” she wrote on her blog. “He loves things that are electronic and come with the ‘supposed to make your life easier’ label. One day he came home with an Instant Pot and a smile, sure that he was about to win husband of the year. I stared at that thing like it was my nemesis.”

Williams worried about the learning curve with the Instant Pot. How could a busy mom have time to learn how to cook with this thing. In fact, she said it took weeks for her to even take it out of the box. Finally, though, out of sympathy for he husband and his generosity, she decided to give it a try.

After a successful first attempt at brown rice, Williams was hooked. She made a vow to cook dinner every night with her new Instant Pot. Her family used to eat out a lot, so she knew it would be a challenge. But, she jumped in with both feet.

Today, she has a growing list of recipes, which she shares with thousands of online fans.

She posts great ideas for side dishes, like these candied yams:

Her blog and Instagram also have recipes for hearty meals like stews and chowders!

“There are nights I don’t start cooking dinner till 6 p.m. because I lose track of time or we don’t get home till late, nights that I used to pull out of a frozen pizza or have my husband grab dinner on his way home from work,” she said in her blog. “My Instant Pot has eliminated those nights. I can throw a few things in the pot and have dinner on the table in under a half hour.”

And, because of her ability to cook quick and healthy meals, her monthly budget got smaller, too! She does the majority of her food shopping at Costco and managed to save about $220 a month.

“Our Costco grocery bill is $150-$200 every two weeks, we spend maybe $50 at other grocery stores throughout the month, and another $20-$40 on Amazon,” she shared on a blog post discussing her weekly shopping routines.”Our grocery bill is always under $500 a month for a family of five. We don’t eat out and my husband takes his lunch to work. For as well as we eat, I feel like that’s a really reasonable budget.”

Healthier eating, quick meal prep and money savings? Sounds like some good tips there! For more details on how Williams is doing with her healthy journey (and more delicious recipes), head over to her website Instant Loss.

Keep up the good work, Brittany!
